Wash the gotu kola leaves thoroughly under cold water and finely chop them. You can use a knife or a food processor for this step.
In a mixing bowl, combine the chopped gotu kola leaves, freshly grated coconut, chopped red onion, and chopped green chilies.
If using Maldive fish flakes, you can either add them directly to the mixture or toast them lightly in a dry pan before adding.
Add lime juice, salt, and black pepper to the mixture. Adjust the seasoning according to your taste preference.
Gently toss all the ingredients together until well combined.
Let the Gotu Kola Sambol sit for about 10-15 minutes to allow the flavors to meld together.
